Weston Supper Club – Chef Abdul and William Sitwell’s collaboration

Indian feast on 1 September 2017, tickets £85.55. This incredible dinner will give you a taste and flavour of the banquets once held by Maharajas at their palaces across India. The chef for the night is Abdul Yaseen, formerly head chef of London's renowned Cinnamon Club, now heading up his own restaurant, Darbaar, in Moorgate. A dynamic and innovative chef from Jaipur, city of some of the greatest palaces of India, his menus combine the best of the East with the finest ingredients he can find in the West. This five-course dinner (including canapes) is, as ever, matched with wines from Nik Darlington and his brilliant esoteric list at Red Squirrel. The price includes an aperitif and a bottle of wine per head. Diners can, on buying tickets, choose meat or vegetarian options. Refreshing and great quality water is also provided by way of sparkling San Pellegrino and still Acqua Panna.

Grouse Platter

The Glorious Twelfth is a term used to refer to 12th August to formally mark the start of the shooting season for red grouse in Great Britain and Northern Ireland. To celebrate in true Darbaar style, we have created a brand new Grouse Platter, which is made up of four equally glorious, aptly grouse-themed dishes to tantalise your taste buds.

The platter, which will be available throughout August until mid October, presents grouse in a variety of different textures to make your meal and dining experience one to remember. Robust and rustic spices have been fused together, taking inspiration from the Maharajas and their enjoyment of the hunt, as well as their masterful techniques of spicing.

At Darbaar, we know that Londoners love their game. To celebrate this, we have ensured all elements included within our carefully crafted Grouse Platter complement one another; clove has been added to battle with the equally strong flavour of game and pumpkin, with lentils to fight against the dryness of the bird, and raita to counteract the power of spice.

Delicacies featured on the new platter include:

• Chargrilled grouse breast, which has been marinated with earthy tandoori spices, then smoked and cooked in the tandoor, served with pumpkin mousse and chilli pumpkin chutney.
• A small grouse fritter, which is made up of minced grouse legs and sweet caramelized onions.
• A slice of grouse nanza, which is topped with inner fillets of grouse.
• Lotus crisps to provide the perfect amount of crunch.
